Tea leaves come from an Asian shrub. They are steamed and then dried to produce green tea. Black Tea is made from leaves that are partially dried, crushed then fermented or allowed to oxidize for several hours. Oolong tea is fermented for a shorter time.
Green Tea is in the spotlight because of its powerful antioxidant compounds called polyphenols. (Since fermentation destroys polyphenols, they are less abundant in black tea) Lauded above all is polyphenol called epigallocatechin gallate ( EGCG), one of the most potent antioxidants ever discovered. Laboratory tests have shown that it is 25 times stronger than Vitamin E at protecting DNA from damage that can cause cancer. It also blocks an enzyme necessary for the growth of tumors.
Human population studies are promising too. In China, drinking green tea regularly is linked with lower rates of intestinal cancer. Studies in both China and Japan link green tea to lower rates of esophageal cancer. Still another Chinese study found that people who drank green tea frequently had a 29 percent lower risk of stomach cancer.
The beverage may benefit the heart, too, Green Tea inhibits blood clotting. It also protects LDL ( The Bad ) cholesterol from free radicals which make it more harmful and may also lower LDL levels. Studies indicate that drinking several cups of green tea a day cuts the risk of stroke and heart attack in half.
Thats not all. Green tea may also boost the immune system by increasing the cavity of certain cells that help fight disease.
